| Dear Wine Lover, Ventana Vineyard was in full harvest the first day of autumn and now we are performing some serious winemaking! But even as busy as the wine making crew and I are, we can still feel the holidays beckoning. Each year I get a lot of questions about wine selection for Thanksgiving dinner. I wanted to get an answer to you all now so that those of you who need to ship still have time to order. The real challenge with this tasty meal is that it is normally served “family” style, all the dishes on the plate together, not course by course. Essentially you need one or two wines that will pair nicely with all of the foods. I like to start my guests with a well chilled glass of Dry Rosado. It pairs extremely well with light appetizers; it looks festive and cheerful and refreshes the palate. The guests can mingle with wine and appetizers while last minute kitchen prep is happening. For the main meal, my choices are Gewürztraminer for the white wine selection and Pinot Noir for the red. Gewürztraminer has a spicy zip that plays with the sweeter items like sweet potato, apple and cranberry. Pinot Noir’s bright red berry fruit and balance will not overwhelm the delicate flavors of the Turkey. At Ventana our current vintages are 2008 Dry Rosado, 2008 Gewürztraminer and the 2007 Pinot Noir. Each of these wines has received a gold medal. Enjoy your holidays! VINES Arroyo Seco is the coolest growing region during the growing season. The old vine clones best suited to this unique climate are Pinot Noir, 103 & 104 with additional clones 115,667,777 and Swan on the new acerage . Average age of the vines is 20 years.
FERMENTATION De-Stemmed whole clusters are placed in half ton open vats for fermentation. The juice is hand punched and then pumped over and filtered several times for optimum color, flavor and tannins. The process takes 3 weeks. The wine is racked directly into barrel for aging and refining
