Ventana’s 2008 Pinot Noir has an explosion of vibrant cherry, raspberry and cranberry flavors with a delicious hint of chocolate. Ten months of barrel aging rounds out the flavor complexities with a touch of smokiness and vanilla. The wine is medium bodied with a bright berry red color. This food friendly Pinot Noir is a pleasing accompaniment to almost any entrée from almond encrusted salmon to duck in cherry reduction sauce. It is fabulous now or cellar up to eight years.

Arroyo Seco is the coolest growing region during the growing season. The old vine clones best suited to this unique climate are Pinot Noir, 103 & 104 with additional clones 115, 667, 777 and Swan on the new acreage. Average age of the vines is 20 years.
This Pinot Noir was fermented in 5 ton open top fermentors. The must is hand punched twice a day for optimal color, flavor and tannins. The process took 12 days. The wine is pressed into tanks to settle, then barrel aged for ten months.
