Ventana grows the Grenache Noir clone for the Dry Rosé adding only 10% Syrah for color. Long hang time in a cool growing region result in intense flavors with superb acidity.
The de-stemmed fruit is allowed to rest in the press for 6 hours. The pressed juice is then settled for 36-48 hours and racked into neutral oak for fermentation. The syrah is blended in right before bottling to add color and body.
