VINES Arroyo Seco is the coolest growing region during the growing season. The Grenache vines were planted in the vineyard in 2000 and the Syrah vines were planted in 1978. All vines use the Vertical Shoot positioning System originally pioneered in the Ventana Vineyard. This pruning and tying system allow optimum air circulation on sunlight for fully ripe fruit.
FERMENTATION The clusters were de-stemmed and the must coldsoaked for 4 days then inoculated with yeast for a 14 day fermentation. The must was pumped-over 2 times a day. Upon completion the wine was pressed into mostly French Oak and some American Oak for Barrel aging
The beautiful deep ruby color of this robust, Rhone–style blend of Grenache and Syrah grown in our rocky soil gave rise to the name “Rubystone”. This wine is a blend of Syrah resting upon a foundation of Grenache Noir – the primary grape of the Cote du Rhone. When grown and experienced with elegance rather than power in mind, this combination is sublime at table. We love the “candy apple” and “cherry” of the Grenache carried by Syrah when in the company of just about every red meat, particularly lamb.
