About This Wine:
Ventana’s cool weather vines produce fruit which creates a wine with a slightly grassy and citrus nose. Our Sauvignon Blanc displays wonderful flavors of white peach, grapefruit and a touch of honeydew. The wine is completely dry with rich rounded texture and a flinty crispness. This is not a Chardonnay "want-to-be"; it is made in the classic French style for the best accompaniment to food. Sauvignon Blanc is the perfect food wine, it pairs very well with many foods especially seafood. One of our favorites is Halibut with lemon beurre blanc.

Vineyard Notes:

The Ventana is a 400+ acre vineyard in the heart of the Arroyo Seco American Viticultural Area, Monterey County California. The soil is primarily a calcareous composition of alluvial deposit with rock and gravel that support excellent drainage.

Production Notes:

The grapes are harvested from the Ventana Vineyard and immediately transferred to the pressing station. The juice is then pumped into tank for 36 to 48 hours of settling and then the clear juice is moved to fermentors. The juice is fermented in stainless steel.
