Jerry Regester, Executive Chef, The Clement Monterey

The evening's wine dinner will be prepared by Executive Chef Jerry Regester. He focuses on using organic ingredients and adhering to the
Monterey Bay Aquariums Seafood Watch Program. He describes his cooking style as rustic elegance with refined flavors. Before coming to the Clement in 2008, Regester was the Executive Chef for the first annual Pebble Beach Food and Wine Event and before that, for Wente Vineyards. THroughout his career he has worked for top notch establishments along side well respected chefs. His resume includes Washington DC's famed Occidental Restaurant where he worked under renowned Chef Jeff Buben, Sous Chef under Philip Jeanty at Domain Chandon in Napa, the Ventana Inn and Spa's Cielo Restaurant in Big Sur, Executive Sous Chef at The Lodge at Pebble Beach, and Chef de Cuisine under Cal Stamenov at the Pacific's Edge in Carmel, home of the Masters of Food and Wine event. His recipe for “Bacon, Lettuce, and Tomato Soup” garnered him first prize at the annual Carmel Tomato Fest.
For the Le Mistral Blending Seminar, Jerry is preparing culinary suprises such as cocoa dusted ricotta gnocchi, Acme coffee braised short rips, and fennel potato gratin. For the full menu, click here.

Guests of the Blending Seminar participate in an interactive Blending Class with winemaker Reggie Hammond. You'll learn and taste wine from each major Rhone Varietal included in Le Mistral. Then, they are invited to make their own custom Le Mistral blend. Guests bottle their custom blend on sight, design a label and go home with their own, unique bottle of Le Mistral.
After the seminar, a gourmet dinner is prepared by a guest chef and paired with library and current vintages of Le Mistral. Often, some of Reggie's other white wines make a guest appearance, as well. The winemaker and chef share the stage as each course is served, explaining the wine, the food, and the reason for their pairing
